pork tenderloin

as mentioned before, wil and i are in charge of the ‘ceremony’ meal at montana. (that sounds so religious…mom and dad are renewing there vows with all us kids). wil was trying to adapt a recipe his mom taught him during their previous visit, and while some parts of the meal were great, it was good we did a practice round, because some parts weren’t bad but in need of refining for our particular crowd.
french bread wrapped pork tenderloin, baked sweet potatoes, & port pomegranate drizzle
a carefully thought out rub, with spices and herbs wil always likes to keep to himself (yummy things like garlic, salt, rosemary, etc).
he then made a ‘pork sandwich’ of sorts, tied up the sides, a quick egg wash on one half as a test, and watched it bake in the oven. we were trying to iron out some of the kinks, and couldn’t remember how it was done the time before…leila- it was wrapped in bacon right? either way, it was another yummy night in the kitchen together.
and how could i forget the port pomegranate drizzle/reduction! directly out of wil’s head, and while our ‘staged’ dish had just a dash, the dishes we served up to ourselves had it poured all over everything because it was so yummy. we are starting to discover all the kitchen gadgets we will want to add to our collection in the future, and a squirt bottle is one of them. the spoon was just not cutting it for trendy plating!
nights like these remind me of just how much wil and i enjoy cooking together and while i was taking more pictures than being a proper, active sous chef, i was there for wil to verbally sound out ideas too. i can see many great meals ahead of me in my lifetime. : )
I had a feeling a decent list of gadgets would be coming our way (Christmas/Birthday)
I LOVE the squeeze bottle–I bought a six pack of them at WalMart I think. Either there or Cash&Carry.

it looks so perfect! nicely done (o: yes, mine was not only wrapped in bacon (supposed to be caul fat, kinda hard to find) also smothered in olive oil. that reduction sounds so good! yummy, wish i could’ve come for dinner (o:
