i think this was a good choice

wil came home with a grocery bag full of chopped veggies today. i guess the school has to pay for composting, so they are welcome (and expected) to take their practice home with them. day four of class and we had vegetables coming out of our ears! (he only started learning how to ‘cut’ yesterday). it didn’t take long to realize we had to get creative on what to do with it all.

so, we’ve got a pot of vegetable soup in the crock, a scalloped potatoes casserole in the fridge, and wil whipped up some mashed potatoes for lunch (kind of an odd lunch choice, but hey, they were tasty). all in less than an hour and a half…it goes so quick when you don’t have to do the chopping yourself.

i ‘got’ to use his new chef knife. nicely weighted, and extra sharp.

it sounds like chopping up veggies is on the syllabus again for tomorrow…any ideas of what to do with lots of onions, potatoes and carrots? :)

  1. add peas and a ground meat and make shepherds pie. homey and delicious, such fall food. yay for free veg!

  2. I will think on this, but the onions and carrots can be put into spaghetti sauce! you could always attempt gnocchi!! OR bring up whatever you have left!!
