			<content:encoded><![CDATA[<p style="text-align: justify;">some years it&#8217;s a bit easier to make a christmas wishlist than other years&#8230;maybe those years i&#8217;m feeling more selfish and materialistic, or maybe our circumstances put us a little bit more in need than usual.</p>
<p style="text-align: justify;">this year, i have had a very difficult time making a list, because wil and i have one gift on the way, that makes everything else just blur into the background&#8230;</p>

<p style="text-align: justify;">yep, we are pregnant! and thrilled. the blog has been a bit neglected the past few weeks, for many true reasons: apartment hunting, thanksgiving and moving homes, but this little treat takes the cake for dampening my creativity and productivity.</p>
<p style="text-align: justify;">we are on the brink of the second trimester and looking forward to some pep coming back into my step and maybe some less nauseated days! and curious to see if the dogs start to notice me changing&#8230;</p>
<p style="text-align: justify;">yesterday we took a few pictures to &#8216;announce&#8217; on facebook&#8230;and they came out cuter than i expected so i thought i&#8217;d share. back on my birthday in november when it was still only our little secret, wil gifted me (and the baby) it&#8217;s first onesie&#8230;our hearts are in oregon, and so will the little chicky&#8217;s!</p>

<p style="text-align: justify;">we are thrilled that everything has looked good in our first couple appointments&#8230;every day is a gift, and don&#8217;t know what tomorrow holds. our one christmas wish is to hold in our arms a healthy sweet boy or girl next summer!</p>

		<title>an oregon, autumn feast</title>

<p style="text-align: justify;">it&#8217;s officially october, and it&#8217;s time to get out your pumpkins, gourds and fall decorations! wil and i were admiring the huge crates of white, cinderella and warted pumpkins that were out at trader joe&#8217;s last night. as much as fall is my favorite, i actually am seriously lacking in any autumn decorations.</p>

<p style="text-align: justify;">so instead, we just make sure we eat lots of fall foods at their best. apples, pears, and butternut squash to name a few.</p>

<p style="text-align: justify;">while in central oregon earlier this week, wil cooked a big meal for our family. i think at this point it&#8217;s on the docket <em>any </em>time he visits home&#8230;his mom lets him go wild in the gourmet grocery, and he comes up with a luxurious feast for all of us to share. it allows him to use his creative side and dabble in small scale catering, the parents to feel budding pride at his amazing skills, and for the rest of us to eat really good food.</p>

<p style="text-align: justify;">the evening was set with 8 of us in attendance, enjoying one another&#8217;s company from the get go&#8230;we are beyond lucky that the friendship between our parents is strong. there is no stereotypical &#8216;in-laws&#8217; conflict, as their friendship began as long ago as wil&#8217;s &amp; mine. i think their relationship definitely helped shaped ours, as our families joined together for events, vacationing, and home groups. how blessed are we?!</p>

<p style="text-align: justify;">so to say the least, the night was relaxed and jovial as wil and i worked side by side in the kitchen.</p>

<p style="text-align: justify;">but the food, you say? i may be partial to my husband&#8217;s cooking, but it was the perfect transition into fall cooking. glamorous, maybe a little, but also hearty, yet light (if that&#8217;s possible). and a number of the ingredients &amp; wine happened to be locally sourced, which made the meal feel even more special and &#8216;oregon&#8217;.</p>

<p style="text-align: justify;">every time we visit home it gets a little bit harder to leave. there are a lot of appealing things about bend, but we also love portland so much! who knows what god has in store for us. either way, i know there will be many more dinners like these.</p>

			<content:encoded><![CDATA[<p style="text-align: justify;">one of the best pieces of advice i receive and will give out to everyone is the importance of <em>dating </em>your spouse. anyone who is engaged, newly married, or celebrating your 30th anniversary stop right now, and go on a date with your husband (or wife for you guys out there). or at least plan one as soon as you can.</p>
<p style="text-align: justify;">whenever our relationship feels tired or strained, or if outside circumstances (like jobs) are causing a rift, i can often look at our calendar and realize we haven&#8217;t gone on a date in too long.</p>

<p style="text-align: justify;">our camping weekend was GREAT. but wil has had to work 8 days straight after that, 7 of them being closing shifts. it didn&#8217;t take much for me to see that this week has been hard on him. i wanted to get him something special, or do something for him, but my mind went blank when he&#8217;s the type of guy that doesn&#8217;t ask or want for much. so i asked him out on a date. seriously&#8230;just because we&#8217;re married, i still have to see if he wants to go out with me! (luckily he said yes)</p>

<p style="text-align: justify;">since he works most nights, our date night had to be a date morning. we stopped in to a quaint little gourmet <a href="http://www.broderpdx.com/gallery" target="_blank">swedish brunch place</a> and enjoyed <a href="http://www.flickr.com/photos/krishansen/2189766681/in/set-72157603672950232" target="_blank">ebelskivers </a>(our family&#8217;s christmas morning tradition), apple fritters and even a brandy-coffee cocktail at ten in the morning. it was the perfect departure from him waking up and immediately thinking of work, and for us to sit together, reconnect, talk about food and dream about us opening a restaurant of his own someday. i think based on his work schedule from wed-sunday, we want to try and make the friday morning date a regular thing, as it would fall right in the middle of his week to help break it up.</p>
<p style="text-align: justify;">i would urge you married folk to not forget to date. just because you are &#8216;married&#8217; by title and maybe even have kids, you should still be in constant pursuance of one another! plus, it just makes everything a bit sweeter and often more fun, as it should be. i&#8217;ve heard of great ideas such as keeping a date night coin jar that you empty your pockets into. when it&#8217;s got a few bucks in there, take yourselves out! or keep a special bowl of ideas&#8230;when you think of a place you want to try or a thing to do, write it down on a slip of paper and put in the bowl. when a free night rolls around and you are both staring at each other saying &#8216;what should we do?&#8217;, pick something out of there! it&#8217;s the perfect balance of planned (it will be something you knew you wanted to do) and spontaneous (you don&#8217;t know what you&#8217;ll pick!). sometimes we just need the structure of literally writing it down on a calendar to help us follow through with the date versus brushing it aside as an inconvenience to an already busy day or week.</p>
<p style="text-align: justify;">go get out there! go date!</p>

			<content:encoded><![CDATA[<p style="text-align: justify;">i came across an old picture, that i decided to put out and change into a different frame because it was just too cute of us. not that i feel old right now by any means, but we were so young, and the print has already started to fade. it was during wil&#8217;s senior pictures&#8230;and instead of choosing a &#8216;prop&#8217; to shoot a couple pictures with, he chose me. (plus his best friend was the photographer so it was pretty casual) and seriously, look at how long (and blonde!) my hair was! mom, i don&#8217;t regret fighting to cut it the day i graduated, but i won&#8217;t deny that i&#8217;m growing it out right now&#8230;</p>

<p style="text-align: justify;">it was perfect timing to read these words. many days i feel like i&#8217;m not the excellent wife i should be based on what i did or didn&#8217;t do, or i compare myself to other godly women/wives, or even compare myself to proverbs 31 and see myself fall short.</p>
<p style="text-align: justify;">but this picture and this article both reminded me that wil didn&#8217;t choose me at so young an age because i was material for the perfect wife. and the day he married me, i wasn&#8217;t material to be the perfect wife. and i&#8217;m not one today.</p>
<p style="text-align: justify;">but as it so eloquently said, it&#8217;s not about perfection, or a mental checklist. and it&#8217;s not about having wil as my center, which will surely cause things to go wrong.</p>

<p style="text-align: justify;">i love those days when i&#8217;m just on a roll&#8230;ideas are flowing, i&#8217;m creating, and producing. but sometimes inspiration needs a little nudge though and i am looking forward to having a weekly reminder of seeing things in a new light and turning them into sources of future inspiration.</p>
<p style="text-align: justify;">this week&#8217;s topic was <a title="week one" href="http://www.gussysews.com/2011/06/inspiration-workshop-week-1/" target="_blank">handmade</a>. and as i looked around our house for something that represented handmade, my mind wandered around, thinking about the cute drawings from our niece on the fridge, the window valance made from vintage hankies from my mom, or even the gorgeous flowers out front that god created so delicately.</p>
<p style="text-align: justify;">but something that continually inspires me on a daily basis, and i think unknowingly had a hand in helping me get to where i am right now, is wil&#8217;s teardrop trailer project.</p>

<p style="text-align: justify;">the past 4-5 months he&#8217;s been building a midcentury inspired teardrop trailer FROM THE GROUND UP. i am amazed, inspired, intrigued, and astonished with every step that he completes and the closer it gets to completion. yes, we love camping, and cannot wait to use it, but the build is so much more than that. although i can&#8217;t express his feelings accurately, from an outsider&#8217;s perspective, i know to him, it&#8217;s not solely about the end result. it&#8217;s the process. it&#8217;s the learning experience. it&#8217;s the ability to do things on his own. and it&#8217;s the ability for us to accomplish something together at times too.</p>

<p style="text-align: justify;">they notice my ring finger and can&#8217;t believe i&#8217;m already married. then when i throw in the kicker that i&#8217;ve been married for <strong>5</strong> years, their eyes open wide and they exclaim, &#8216;well how old <em>are</em> you!?&#8217;</p>
<p style="text-align: justify;">yep, wil and i are youngins. we met young (wil 13, me 12), we fell in love young (wil 13, me 12), started dating young (wil 17, me 16), and married young (wil 21, me 20).</p>
<p style="text-align: justify;">and just saturday we celebrated our fifth anniversary of that wedding day (<a href="http://en.wikipedia.org/wiki/Friends" target="_blank">annevadaversary</a> as wil calls it). i love that we&#8217;ve been married for 5 years, but i also love that we&#8217;ve been a special part of one another&#8217;s lives for 13. i can&#8217;t wait for our future kids to hear us retell parts of our story&#8230;and when one of them reaches those awkward tween years, for us to tease them that their future spouse might already be in their midst.</p>
<p style="text-align: justify;">due to being so young, our budget each year tends to be small. in the past we&#8217;ve kept it simple and sometimes just made a nice dinner at home. but this was a milestone! and it definitely is a blessing to be a part of the food industry&#8230;as we dined extremely well at <a href="http://www.laurelhurstmarket.com/" target="_blank">laurelhurst market</a>. it may seem like a cop out to go to wil&#8217;s old place of work and not try something new, but with said budget, we had a fabulous meal and a little bit of royal treatment, allowing us to have somewhat of an extravagant dining experience that we could not have recreated at an unfamiliar place.</p>
<p style="text-align: justify;">and that budget usually spills into the gift territory, and this year (among other things that we gifted each other), i wanted to share a really fun, quick thrift store find that i gave to wil.</p>
<p style="text-align: justify;">as our schedules now allow and as the weather progressively gets nicer, we are enjoying on sunny morning coffee dates out on our lawn&#8230;we sometimes look at the headlines on the paper, we marvel at our flowers, we talk about work, and we make up stories about all the neighbors in the 2 triplexes across the street. we love our chairs, but with our whole slew of coffee stuff to carry out there (french press, mugs, creamer, etc) we kept borrowing an inside end table to bring out with us&#8230;a hassle! i found a funky little metal and glass side table from the salvation army and gave it a fun coat of aqua spray paint to join our chairs.</p>

<p style="text-align: justify;"><em>*my attempt at sewing a cozy for a french press. the concept is sound&#8230;the execution not so much. anyone know of a good tutorial that allows space for the spout, maybe loose with a drawstring? this was after a night of putting pieces together, taking them apart, frustratedly putting them back together again. trying to make one from scratch. a 60% success i&#8217;d say.</em></p>

<p>he is busy working at his restaurants, but if anyone is ever interested in throwing a special dinner, catered party, etc., he&#8217;d love to be your man. with a few &#8216;jobs&#8217; lined up over the next couple months and one of those online groupon/livingsocial deals in our pocket, we got some great mini moo cards for him to be &#8216;official&#8217;. wil laughed when i said that, and corrected me to say that he &#8216;officially has business cards&#8217;. yay&#8230;</p>

<p>we got the cute little package today and i just had to share. i think the combination of being born artistic and then marrying into a designer family, i have my eye trained on good packaging/branding- and moo&#8217;s got it. i couldn&#8217;t wait to open that mini box of cards, especially when it teasingly told me on the outside to &#8220;open it, quick!&#8221;.</p>
<p>with a variety of photos i&#8217;ve taken of wil&#8217;s treats along the way, we have a pretty attractive set of calling cards to hand out, if i say so myself.</p>

<p style="text-align: justify;">amidst school, work and each of our fabulous <a href="http://www.flickr.com/photos/mchiaravalle/4662296950/" target="_blank">spring vacations</a>, we are still able to find time to spend with each other and with our friends.  just after we got back from las vegas, we threw together some plans for a quick hang-out.  since the sun was just barely peeking through the clouds for the first time in about two months, we thought a lite summer smörgåsbord was appropriate.  dave was in charge of bread and beer (of course); laura heeded the responsibility of homemade hummus, salad and wine; and kris and i were to bring a salami and cheese plate.</p>

<p style="text-align: justify;">i was able to scour the shelves at work to find some fantastic deals on some <a href="http://www.salumicuredmeats.com/products/agrumi2.jpg" target="_blank">salumi salamis</a>, and some swiss cheeses, but we felt our meal was lacking.  kris was thinking on her feet and threw together a simple balsamic vinaigrette and marinated some asparagus that was crunchy, tangy and oh-so-delectable.  now, i know that we&#8217;re not the first people to use balsamic vinegar to dress vegetables.. but who are we to deny the flavorful callings of cool crunchy vegetables with that sweet, but tart kiss to our tongue.</p>

<p style="text-align: justify;">this is such a simple side component that can be thrown together in a matter of minutes as a completing component to a picnic in the park.  or, if you want to give the salad a little more girth, throw a few different types of vegetables in &#8211; carrots, broccoli, red bell peppers, zucchini, squash, mushrooms &#8211; you name it!  we liked it so much we had it again the very next day.</p>

<p><strong>marinated asparagus</strong></p>
<p>1 lb asparagus spears &#8211; trimmed<br />
1 medium yellow onion - julienne<br />
1/2 cup balsamic vinegar<br />
1/4 cup olive oil<br />
2 tbs very finely minced garlic<br />
1 1/2 tbs dry italian seasoning<br />
2 tsp dried thyme<br />
1 tsp kosher salt<br />
1/2 tsp black pepper</p>
<p style="text-align: justify;">1. submerge the asparagus spears in a large pot of salted, boiling water for about a minute (more time for fat spears, less time for skinny spears).  immediately move the asparagus into a bowl filled with ice and water to chill.</p>
<p style="text-align: justify;">2. to make the marinade &#8211; combine all remaining ingredients except the onion in a bowl whisking in the olive oil a few drops at a time.</p>
<p style="text-align: justify;">3. toss asparagus and onion in the marinade and let sit for 1 hour in the refrigerator.</p>

<p style="text-align: justify;">we&#8217;re finding ourselves challenging each other more and more about how far we can stretch the few dollars that we have here and there.  just the other day, kris sent me to the grocery store with $10 in hand to stock our fridge with veggies and the like.  i came home with 2 crowns of broccoli, 2 sweet potatoes, 1 large yellow onion, 6 small shallots, a head of green leaf lettuce, a head of bibb lettuce, 1 bunch of parsley and a 10 pound bag of russet potatoes.  somewhat of an accomplishment if i say so myself.</p>

<p style="text-align: justify;">i know, i know&#8230; what does this have to do with the appetizer that you&#8217;ve all been <em>dying</em> to hear about?  i guess i feel accomplished when i can come up with a classical, gourmet and flavorful dish that i don&#8217;t really need to shop for.  our seared kobe beef carpaccio was an excellent addition to this fresh ingredient menu and since we already had some meat and accessories in the fridge it was easy on the wallet too!</p>

<p style="text-align: justify;">classically, the appetizer is meant to wet the appetite so that the guest is not so hungry that they rush through the entree.  food is meant to be enjoyed and a guest should be able to enjoy 4 things about an appetizer &#8211; a main item, a dressed salad, a sauce and a garnish.  it&#8217;s when all these come together that you find something so tantalizing that it&#8217;s why tantalizing is called tantalizing.</p>

<p style="text-align: justify;">2 oz lean cut, fresh, high quality beef<br />
1/4 cup micro greens<br />
3 tbs olive oil, 1 tbs reserved<br />
2 tsp capers, chopped<br />
1 sprig (1 tbs) fresh rosemary<br />
1 tsp balsamic vinegar<br />
parmesan cheese to taste<br />
salt and pepper to taste</p>
<p style="text-align: justify;">1. season 4 sides of beef cut with salt and pepper (not top and bottom) and sear in oiled pan until just brown on 4 sides &#8211; refrigerate</p>
<p style="text-align: justify;">2. in small saucepan, cover rosemary with 2 tbs olive oil and bring to 110 degrees &#8211; hold between 110 and 150 for 25 minutes. (it helps to do more of this than just 2 tbs.. as it can be used in cooking and in salads to give a nice rosemary flavor to any dish).</p>
<p style="text-align: justify;">3. slice beef 1/8 inch thick and place between layers of plastic wrap and gently pound to 1/16 inch thickness being careful not to tear the slice.  place slices on plate as desired.</p>
<p style="text-align: justify;">4. whisk together balsamic vinegar and remaining olive oil and lightly dress greens and place on top of pounded beef.</p>
<p style="text-align: justify;">5. finish by sprinkling chopped capers, shaved parmesan, salt, pepper and drizzled rosemary-olive oil.</p>

<p style="text-align: justify;">my plan is to split up the 6 courses and write about each independently.</p>

<p style="text-align: justify;">an amuse bouche (amuse the mouth) should be just that &#8211; a single bite to warm your appetite and get you thinking about food.  it&#8217;s often said that the amuse bouche should represent the chef, his abilities and his meal more than any other dish on its own.  the amalgam of flavors should be perfectly balanced and contrast in such a way that send your senses shivering.  i really love that it&#8217;s just a single bite of perfection that warms your appetite for what&#8217;s to come.</p>
<p style="text-align: justify;">the amuse bouche is kind of a lost art in modern cuisine.  we toss it into the hors d&#8217;oeuvres category as a finger food&#8230; but it&#8217;s bigger and bolder than that.  at many classical restaurants, the amuse will come first &#8211; as an item not on the menu and at the chef&#8217;s discretion. the chef choses the flavors which is why it&#8217;s usually a representation of his work.  i mean really&#8230; how often does a chef get to tell his guests what to eat?</p>

<p style="text-align: justify;">the amuse bouche for my meal was simple but had some nice sweet/savory contrast (as most should).  the more the ricotta and fig blended with the savory cracker, the more my mouth salivated.</p>
<p style="text-align: justify;">if i had to change anything about this amuse after the fact, i would probably poach the figs in a sweet/citrusey liquid just to give it another dimension of flavor.</p>

<p>instructions</p>
<p>1. quarter figs.  lightly whip ricotta cheese with cream, oregano, thyme, salt, pepper and lemon juice.<br />
2. on each crisp, pipe 1 &#8211; 1 1/2 tbs ricotta mixture as a base, press fig lightly into ricotta mixture.<br />
3. enjoy &#8211; it&#8217;s really that easy.</p>
